Born in India, Japanese curry - or "kare raisu" as the Japanese call it - is very popular because it is cheap and very easy to prepare. It appeals to both students and nostalgic gourmets. Less spicy than the Indian version, its thick and subtly sweet sauce makes it the ultimate comforting family dish. There are as many recipes as there are cooks who prepare it.
