TEA & INFUSION - Infusions

While Japan is renowned for the quality of its teas, it also produces delicious infusions, notably sobacha and mugicha. In Japanese, "soba" means buckwheat and "cha" means tea. Sobacha is an infusion of roasted buckwheat seeds. Theine-free, it is rich in antioxidants and can be enjoyed hot or cold. After drinking, the buckwheat grains can be incorporated into a sweet preparation or soup. "Mugi" refers to barley. Mugicha is an infusion of roasted barley grains. Popular with children (as it contains no theine), it can be enjoyed hot or cold, depending on the season. It can be a good alternative to coffee, as the longer you leave it to brew, the more similar its taste and color become.
