Our tips

The "sobayu" cooking water is highly nutritious (fiber, potassium, antioxidant, vitamin B, etc.), so you can drink it or pour it over leftover noodles at the end of the meal with a little shichimi spice.
Rinsing them under cold water stops the cooking process and makes your pasta melt. It also gets rid of the starch, leaving your pasta smooth and non-sticky.

For 1 person: plunge 2 portions (120g) of soba into 1L of boiling water. Cook for 6min, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adapt the cooking time and firmness of the noodles to your taste. Beware of overflowing during cooking.
