High-quality glutinous rice of the Shin Taisho Mochi variety, nicknamed by the Japanese "the king of glutinous rice", or "the ghost rice" due to its great rarity outside Toyama prefecture, where it is hardly ever distributed.
It is characterized by a sticky, chewy texture that does not disintegrate during cooking, making it ideal for pastries, confectionery or sekihan, a dish based on rice and kidney beans.
It is harvested in Toyama prefecture by Nanohana, a company specialized in rice production. Black rice is grown in Toyama prefecture, which is renowned for the quality of its rice. The plains are irrigated by melting snow from Mount Hida, also known as the "Northern Alps". With its fertile, nutrient-rich soils, the region is ideal for growing rice.

For one person: wash the equivalent of a cup of rice by hand, then rinse until the water runs clear. Add a bowl of water to a saucepan and leave to stand for 30 min. Cover the saucepan and heat over medium heat until boiling, then simmer for 10 min. Turn off the heat and leave the lid on for 10 min.
