This is Japanese Koshihikari rice adapted to the European climate! It is harvested from rice fields in the Italian Alps. Its taste and texture are very similar to Koshihikari, making it a more ecological alternative to Japanese Koshihikari. Only the inedible outer shell has been removed: the bran and germ have been preserved to enhance its light hazelnut flavor and preserve its nutritional qualities. Koshihikari has a shiny appearance and an umami taste that doesn't fade during cooking, making it the ideal everyday rice to accompany a light tsukemono or raw fish dish.

Our tips

300 g rice for 2 to 4 people: hand-wash the rice 3 times with water, then rinse until the water runs clear. Place the rice in a saucepan, add 600 ml water and leave to stand for 1 hour. Cover the pan and heat over medium heat until boiling. Lower the heat and cook for 10 minutes without removing the lid. Turn off the heat and leave to stand for a further 10 minutes, still with the lid on. Stir the rice gently before serving.
