Adachi Jozo is a soy sauce brewery with a history dating back to 1889, based in Hyôgô prefecture. It is one of the last breweries to produce soy sauce in "kioke", i.e. with fermentation in wooden casks.

Super classic taste but very good!
A very fragrant and tasty soy sauce. I like to use it with raw fish, grilled ravioli or for other seasonings.
