Oota Yohachiro

The brewery, based in Miyagi Prefecture, was founded in 1845. At that time, it was an inn that also produced miso and soy sauce. In 2017, Oota Yohachiro returned to traditional brewing methods to preserve the craft. The soy sauce mash is pressed in several stages, allowing it to develop over time.
