Collection: Japanese matcha tea

Matcha is a finely ground green tea, crushed with the stone wheel. It is partially sunny during its culture and then shaded before harvest. Traditionally, it is used in Japan for the tea ceremony, a ritual linked to Zen Buddhism. Today, it is very popular and appreciated for its vegetable flavor, its deep Umami taste and for its important rate of antioxidants and nutrients. It is prepared with water heated to 70 ° and a chasen (bamboo whip).

Our matcha-based recipes

The three types of matcha

CEREMONY

The finest and purest, intended for traditional tasting. Simply prepared with hot water, it reveals all its subtlety, delicate aroma, and velvety texture. Slightly bitter and wonderfully smooth on the palate, it delights matcha purists.

Discover

CLASSIC

Of intermediate quality, it is perfect for lattes, smoothies, and other drinks. It retains the color and taste of matcha while being more affordable than ceremonial grade. It is ideal for enjoying matcha every day.

Discover

CUISINE

Designed for cooking and baking, it can be cooked and combined with other ingredients without any problem. Its more pronounced and sometimes slightly bitter flavor intensely flavors cakes, creams, or sauces.

Out-of-stock & matcha prices

For several months, we have been facing an explosion in global demand for matcha, which has more than tripled, particularly outside Japan. However, Japanese production, driven by small family farms, does not have the capacity to keep pace. As a result, purchase prices from our producers have doubled in one year.

We have always chosen to limit the impact of this increase on our selling prices by absorbing part of the costs. However, to continue offering high-quality matcha, we are now forced to adjust our prices by a few euros.

Despite our efforts, we are only able to cover around 20% of actual demand in-store and online. Supply remains very tight. To avoid missing out on your favorite matcha, we recommend signing up for email alerts on the product pages: you will be notified in real time as soon as new stock becomes available.

The good news, however, is that we are continuously expanding our selection, with more than thirty matcha products, from fine ceremonial grades to culinary options, so everyone can find the matcha that suits them.

Learn more about matcha

Matcha is rich in antioxidants, vitamins, and minerals. It may:

  • Help boost energy and alertness thanks to natural caffeine.
  • Promote concentration and relaxation thanks to L-theanine.
  • Contribute to the body's detoxification.
  • Support metabolism and weight management.

Matcha should be stored away from light, moisture, and heat. Ideally, keep it in an airtight container in the refrigerator to preserve its color, flavor, and antioxidant properties.

Matcha is generally safe for most people. Excessive consumption may cause nervousness, insomnia, or stomach aches due to its caffeine content. It is recommended to limit consumption to 2-3 cups per day.

To prepare traditional matcha and fully enjoy its benefits:

  1. Sift: Sift 1 to 2 teaspoons (2 to 4 grams) of matcha into a tea bowl (chawan) to remove any lumps.
  2. Add water: Heat water to approximately 70-80°C. Pour about 60 ml of hot water over the matcha.
  3. Whisk: Use a bamboo whisk (chasen) to mix the matcha with quick, W-shaped movements until a fine, creamy foam forms on the surface.
  4. Consume immediately: Drink the matcha immediately after preparation to maximize its flavor and benefits.

The most renowned regions for matcha cultivation in Japan are:

  • Uji (near Kyoto): Considered the birthplace of matcha, Uji produces some of the finest matchas in the country, renowned for their sweetness and depth of flavor.
  • Nishio (Aichi): Known for its high-quality matcha, often used in ceremonial and premium grades.
  • Shizuoka: Although better known for sencha, Shizuoka also produces high-quality matcha.

Matcha: Matcha is made from tencha tea leaves that are shaded before harvest, which increases their chlorophyll and amino acid content. After harvesting, the leaves are ground into a fine powder. When you consume matcha, you ingest the entire leaf, which enhances its benefits.

Regular green tea (Sencha): The leaves are steeped in hot water and then removed, which means that you only absorb the nutrients that are soluble in water.

Yes, you can consume matcha daily. It is rich in antioxidants, amino acids such as L-theanine, and vitamins. However, due to its caffeine content, it is advisable to moderate the amount consumed to avoid effects such as insomnia or nervousness. In general, 1 to 2 cups per day is a reasonable amount.

Matcha is very versatile and can be incorporated into your diet in different ways:

The ideal water for preparing matcha should be heated to approximately 70-80°C. Water that is too hot can burn the matcha, giving it a bitter taste and degrading its antioxidant properties.

To avoid lumps when preparing matcha:

  1. Sift the matcha before using it to make it lighter and more uniform.
  2. Add a small amount of hot water to the matcha and mix gently to form a paste before adding the rest of the water. This helps dissolve the matcha more evenly.
  3. Whisk vigorously with a chasen to fully dissolve the powder.

To choose a quality matcha, consider the following aspects:

  • Color: High-quality matcha has a bright green, almost emerald color.
  • Texture: The powder should be fine and silky.
  • Aroma: It should have a fresh, slightly sweet, herbaceous fragrance.
  • Taste: Quality matcha is smooth and umami, with little bitterness.

Yes, matcha contains caffeine, but the presence of L-theanine in matcha softens its stimulating effects, providing gentler, longer-lasting energy without the peaks and crashes often associated with coffee. A serving of matcha contains approximately 30 to 70 mg of caffeine, which is less than a cup of coffee but more than a cup of classic green tea.

Matcha is classified into several grades according to its quality:

  • Ceremonial grade: Used for tea ceremonies, it is of the highest quality, with a smooth flavor, a bright green color, and no bitterness.
  • Premium grade: Ideal for daily consumption, it offers a good balance between sweetness and bitterness, with a bright green color, though slightly less intense than ceremonial grade.
  • Culinary grade: Used in cooking, this matcha has a stronger and sometimes more bitter taste, with a less vibrant green color. It is perfect for smoothies, pastries, and other preparations.
