At Biwan, we sit at the counter facing the kitchen or on more traditional tables, we taste a 5 -step menu in dinner in the heart of koshitsu, small traditional Japanese salons, for a gentle experience in an intimate setting .
But why Biwan? While waiting to find a final name for it, our teams had given "B1" (to pronounce in English) as code name to the establishment, in reference to the basement (Basement 1) where it is within 'Irasshai. Some letters and a strong attachment to this code name later, the "Biwan" was born!
Noon
On the menu du Midi, Shokado Bento, a Japanese culinary tradition, offers a full meal, nicely presented in a compartmentalized box. You will find raw fish, tempura of vegetables and shrimp, rice, a miso soup, as well as a dish inspired by the chief's creations. And the icing on bento: the offer will vary every day to allow the Mitsunori chief Kozen to give free rein to his imagination.
The evening
Our chef, Mitsunori Kozen, offers authentic cuisine of washoku, Culinary tradition listed in 2013 as an intangible cultural heritage of UNESCO. We will discover an alliance between Kyoto Kaiseki cuisine and that, more family and familiar, that the Japanese will recognize, served in a relaxed atmosphere.
