It is made exclusively from Omachi rice from Okayama Prefecture, the parent rice of the famous Yamadanishiki and Gohyakumangoku sake varieties. The water used is soft, light spring water drawn from a depth of 100 meters in the Asahi River in Okayama Prefecture. Each step of the production process is carried out by hand under the supervision of master brewers. Its fruity profile pairs particularly well with salmon or tuna sashimi, or grilled white fish. Its natural umami flavor is a perfect accompaniment to white meats in sauces and stewed dishes.
