Genkoji is a company specializing in the research and cultivation of koji spores, founded in Kagoshima Prefecture. Its founder, Kawachi Genichirō, isolated a koji strain there in 1931 that was so robust that it is now used in around 80% of the artisanal shochu produced in Japan. Run by the same family for three generations, the company has established itself as one of the leading references for producing koji spores intended for miso, amazake, and soy sauce.
