Kunie Hasutani, the wife of a monk at a Buddhist temple in Shiga, is the founder of Nouvelle SHOJIN, a modern reinterpretation of traditional Shojin cuisine, a tradition her family has practiced for 28 generations. By listening to the “voices” of vegetables grown in nature, she creates inspired dishes that celebrate the harmony between the earth, plants, and people. A true culinary artist, she transforms this ancestral practice into an innovative gastronomic experience, where each dish is a celebration of nature and simplicity.
