Founded in 1823 in Ono, Fukui Prefecture, Kōbara Suzō has upheld nearly two centuries of tradition centered on the “true taste of vinegar” under the Rōbai brand. The JAS-certified rice used, grown in Fukui and Ishikawa prefectures without pesticides or synthetic chemical fertilizers, is fermented using the static fermentation method, a traditional technique that softens the musty smell characteristic of ordinary rice vinegar, resulting in a fruitier flavor and milder acidity.
