Founded in 1906, the Usui brewery produces sakes that are particularly prized by connoisseurs.
The sakes are brewed and produced in Ōmachi, a city in Japan’s Nagano Prefecture that is steeped in history and symbolism. At the foot of the Hida Mountains, it is an estate of the Ise Shrine dating back to the Heian period (8th–12th centuries), considered in Japan to be a gift from the gods, with conditions perfectly suited to sake brewing: an abundance of pure groundwater, a climate ideally suited to rice cultivation, and local expertise rooted in a long ancestral tradition.
The rice varieties (Miyama-Nishiki and Hitogokochi) come exclusively from the region, meaning these sakes reflect both the benefits of the local climate and the personality of the master toji. The brewers at Usui have been committed to crafting delicious beverages that capture the full depth of this terroir.
