More acidic than yuzu, it also has rounded, umami notes reminiscent of dashi broth. Its thin skin and large size make it a particularly juicy fruit. Tradition dictates that a Hebesu tree be given to newlyweds so that they can use its fruit as a secret ingredient in their dishes. Each bottle contains the equivalent of five to six fruits' worth of juice.
