Buckwheat soba noodles made with over 50% buckwheat flour, as well as Yumechikara wheat from the Hokkaido region in northern Japan. Their firm, crunchy texture and nutty flavor are equally enjoyable hot, in broth with marinated tofu (Inari Age) or soy-marinated eggs (Ajitama), as well as cold, served with Men-tsuyu sauce, tempura, and tsukemono.
