Fukushinzuke is a Japanese condiment made up of a mixture of radish, eggplant, cucumber and ginger marinated in vinegar, sugar and salt.

It is slightly sweet and acidic, with a umami note brought by soy sauce.

This condiment is generally consumed with rice, noodles, meat or fish is ideal in bentos or sandwiches. It can also be served as an aperitif or as a starter, as a garnish of a plate of raw vegetables or grilled vegetables.
