A traditional sweet potato shochu with a rich and balanced flavor, hints of bitterness, and a round and deep texture. Made in Miyazaki using a traditional technique passed down from generation to generation for over a century, it is made from sweet potatoes harvested in the fall, then fermented in large earthenware jars with koji cultivated in wooden vats. The shochu is then slowly aged for one year in a clay warehouse. This production method gives it a unique taste and texture, which can be enjoyed hot or cold, on the rocks or diluted with water. Founded in 1892, the distillery is the last in Miyazaki to perpetuate this expertise. It has received several gold medals at Japanese national spirits competitions.
