Every year since 2018, the Chichibu distillery, founded by Ichiro Akuto in 2008, has been creating a blend dedicated to Paris. Six labels have been designed to illustrate this new edition, in a colorful pop graphic style, paying homage to Japanese kawaii culture. We have chosen to offer you the one dedicated to Tokyo's flagship district, the Japanese cousin of the Champs Elysées: Ginza. Inspired by postage stamps with their serrated edges, the labels evoke travel and the correspondence between the two urban cultures. Chichibu Paris Edition 2025 is the result of a complex blend: four new French oak casks, one Spanish oak cask that previously contained sherry, three French oak casks that previously contained Bordeaux red wine, one American oak hogshead, six bourbon barrels, and two bourbon barrels that previously contained a very peaty whisky. The whiskies that make up this cuvée range in age from five to fourteen years. Rich in this combination of barrels, which are diverse to say the least, its aromatic and flavor palette is based on a malty structure that allows it to stay the course against all odds. Particularly well-balanced, it cheerfully traverses earthy, fruity, spicy, indulgent, and infused regions that rival each other in intensity.
Nose: Rich and creamy. Supported by a pleasant malty, earthy and spicy (cinnamon) bitterness, the aromatic palette quickly opens up with notes of tropical fruits (passion fruit, lychee), black berries (grapes, blackberries) and undergrowth (dry leaves, porcini mushrooms). Then, subtle aromas of prune lend it a great deal of nobility.
Appearance: Topaz.
Palate: Clean, lively. Initially oily, richly peaty, lemony and peppery, the flavor profile evolves towards more honeyed and waxy notes. Becoming increasingly smooth, it develops more and more indulgent (toasted bread, rusks), malty (barley porridge) and deliciously fruity (mirabelle plum, damson plum) flavors.
Finish: Long and concentrated. Echoing the malty tones of the nose and palate, the finish is refreshed by flavors of gentian, mint, eucalyptus, and sage. Both exotic (passion fruit) and candied (plum), the retro-olfaction is gradually softened by notes of toffee and bourbon vanilla.
