Its creator, Kiyoshi Fujii, had the idea 15 years ago of reusing the yuzu skin, which had previously been discarded during the fruit's processing. His creation is now an integral part of Kyushu's culinary heritage. Its name, "Yuzu no Manma", is protected and guarantees its authenticity.
