This shiratamako rice flour is made from glutinous rice ground in a wet process and then dried. The result is a smooth dough that does not harden when cooled, making it the perfect flour for frozen and fresh desserts. Shiratama dango are an excellent substitute for tapioca in bubble tea or desserts. Simply shape small balls, poach them, then cool and serve with a bowl of coconut milk and mango.

Mix 55 g of this flour with 1 tsp of sugar and 2 tbsp of water, then form about fifteen small balls. Cook for 2 minutes in boiling water, then let them sit in ice water. Remove them from the water and season as desired!
