Its clean, ultra-dry body is balanced by delicately sweet notes and a refreshing liveliness, offering a harmonious and contemporary tasting experience. It is made from Nakateshinsenbon rice grown in Hiroshima Prefecture, polished to 70%. The distinctive feature of this sake lies in its production method known as “fourth-addition amazake.” While sake is traditionally brewed in three successive stages, an amazake made from rice and rice koji is added just before pressing. This technique preserves the umami and natural sweetness while maintaining a decidedly dry finish. On the palate, the attack is clean and crisp, followed by a slightly effervescent sensation that lends lightness. The whole is enhanced by grape-like aromas, resulting in a clean, precise, and refreshing tasting experience. The balance between spiciness, sweetness, and acidity is the signature of this junmai.
