Founded in 1883 in Usuki, in Oita Prefecture, Fujijin Shôyu specializes in fermented products such as soy sauce and miso. At the end of 2025, it launched the Fujiya Jinbei range, packaged in carton cartons and designed as a return to basics: simple ingredients with no animal-derived ingredients. Each sauce is based on a homemade dashi made from dried shiitake and kombu, enhancing the range's umami foundation.
