A rich and aromatic hojicha tea, made from rare native tea plants known as "Zairai-shu." These tea plants are grown from seeds rather than cuttings. The trees develop a deep root system that allows them to absorb a wide range of nutrients from the soil. This direct connection to the earth gives the leaves a taste and aroma that is at once unique, powerful, and subtle.
The tea plants are grown in Shintomi, Miyazaki Prefecture, without pesticides or chemical fertilizers, on environmentally friendly plantations nestled between mountain ranges and the Pacific Ocean. This region, with its warm and humid climate, is blanketed in morning mist and enjoys abundant sunshine, offering ideal conditions for tea cultivation that allow the leaves to fully develop their complexity and rich flavor.
To produce this tea, only leaves from tea plants over 70 years old were used. They offer a complex aromatic profile, developing a robust, rustic, and deeply umami flavor, enhanced by a hint of roasted notes.
The production process enhances the unique character of zairai-shu: the leaves are handled throughout the process to preserve their natural vibrancy, as well as the soil’s minerality and the aromatic structure resulting from decades of slow growth.
This tea can be enjoyed both hot and cold. When cold-brewed, it reveals sweet, refreshing, and rustic aromas, reflecting the age of the trees and the vitality of the soil. When brewed hot, its toasty aroma and hint of bitterness make it a perfectly balanced tea that can be enjoyed in any season and on any occasion.
