A blend of malt and grain whiskies, as its name suggests, this blend is the work of Ichiro Akuto, distiller and owner of Chichibu and independent bottler of some of the rarest Japanese whiskies (Hanyu, Kawasaki, etc.). Known for his malt blends (Mizunara Wood Reserve, Wine Wood Reserve, Double Distilleries), Ichiro offers his blends in limited quantities outside of Japan. Bottled at 46.5% ABV, non-chill-filtered, this whisky is smooth, rich, and full of character, showcasing all the talents of its creator. Ideal as an aperitif, it is best enjoyed at room temperature and pairs wonderfully with olives and gyoza. Profile: Nose: Fruity with notes of peach, apricot, citrus zest, and banana. A lovely smoothness stands out against notes of malt, caramel, and vanilla crème brûlée. Palate: Delicately grainy with notes of barley malt coated in toffee and honey. Spicy and fresh with gingerbread, black pepper, nutmeg, saffron, pipe tobacco, and freshly cut hay. Rich with tropical fruits. Finish: Balanced and refined with vanilla and tropical fruits.

Founded in 2007 by Ichiro Akuto, grandson of the founder of the Hanyu distillery, Chichibu has been operating since February 2008. Equipped with two stills custom-made in Scotland by Forsyth's, it was not only the first Japanese single malt distillery since Hakushu, but also the smallest and most discreet. Beginning with the 2008 release of several very young whisky bottlings, the “newborn” range, Ichiro presented his first “real” whisky at Whisky Live Paris 2011: a three-year-old cask-strength whisky. Today, the distillery bottles its own whiskies aged up to 12 years for its Chichibu and Ichiro's Malt ranges. The distillery also houses the remaining stocks of Karuizawa, Kawasaki, and Hanyu.
