Shincha (新茶, literally “new tea”) refers to the very first harvest of green tea of the year in Japan. It is a highly anticipated seasonal product, symbolizing the renewal of spring.

Shincha is distinguished by a distinctive freshness due to its low catechin content (which causes astringency) and its high levels of amino acids, particularly theanine, which accumulate during the winter due to the lack of photosynthesis.
