• A blend of rice and barley miso (awase miso)
• A balanced flavor combining sweetness and umami
• Easy to incorporate
• Made in Oita by Tanaka Shoyu
• A unique, century-old koji culture

This awase miso combines two types of fermentation: rice koji, which adds roundness and sweetness, and barley koji, which is more rustic and aromatic. This blend results in a balanced miso, rich in umami and pleasant on the palate. Its texture is pleasant and makes it easy to use in everyday cooking. Made in Oita Prefecture by Tanaka Shoyu, a century-old company that uses natural resources and local ingredients. The unique depth of flavor in this miso comes from the koji cultures used. Tanaka Shoyu has been using the same strain of this culture for over 100 years. Its rich flavor makes it an ideal miso for use in marinades for meats and vegetables.

The hidden treasure of Tanaka Shoyu lies literally within its walls. The koji ferments they use have lived naturally in the walls and beams of their buildings for over 100 years. This is called “kura-tsuki,” meaning “attached to the brewery.”
