Miso & sesame cookie recipe

Ingredients

  • 250g butter
  • 115 g white sugar
  • 115 g vergeoise
  • 140g dark chocolate
  • 260g flour
  • 60g white miso
  • 1 whole egg
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 20 g sesame seeds (toasted or unroasted, as preferred)

Directions

  1. Preheat your oven to 165°C.
  2. Mix the butter with the white sugar and vergeoise until smooth.
  3. Add the honey and mix again.
  4. Add the white miso and continue beating to blend it in.
  5. Add the beaten egg a little at a time and mix until smooth.
  6. Sift the flour and baking powder, then gradually add them to the mixture.
  7. Add the chocolate pieces, mix gently, then set the dough aside in the fridge for 30 minutes.
  8. Use an ice-cream scoop to shape dough into balls for regular cookies. Sprinkle with sesame seeds for a crunchy touch.
  9. Bake the cookies for 13 to 16 minutes at 165°C.
  10. Once out of the oven, use a round cookie cutter to shape them perfectly if necessary. Leave to cool, then enjoy!
