This miso is brewed using the Tennen Jôzô method, meaning no enzymes or additives are added for over a year. The result is a unique miso with a natural flavor that may vary slightly from year to year. Barley miso is very popular in western Japan, particularly in the Shikoku and Kyushu regions. Barley stimulates the appetite and gives the miso a rich umami flavor with a slight sweetness and a pleasant grainy taste. It is perfect for making soups, sauces, and marinades, or for serving with vegetables, meat, or fish. It is also an essential ingredient for noodle dishes. This barley miso is produced locally and by hand under the JAS label, which guarantees the protection of the environment, the climate, and biodiversity. Less than 1% of Japanese barley is produced under this label due to the economic challenge barley poses for Japanese farmers: it is half as profitable as rice. Marukawa Miso has chosen to produce high-quality barley miso in small batches by purchasing the barley at a fair price directly from Japanese farmers.
