This miso is brewed using the Tennen Jôzô technique, i.e. without adding enzymes or additives for over a year. The end result is a unique miso with a natural taste that may vary slightly from one year to the next. Barley miso is very popular in western Japan, particularly in the Shikoku and Kyûshû regions. Barley stimulates the appetite and gives miso a rich, umami, slightly sweet, cereal-like taste. It's perfect for soups, sauces and marinades, or as an accompaniment to vegetables, meat or fish. It's also an essential ingredient in noodle dishes. This barley miso is produced locally under the JAS label, which guarantees protection of the environment, climate and biodiversity. Less than 1% of Japanese barley is produced under this label, due to the economic challenge barley represents for Japanese farmers: it is half as profitable as rice. Marukawa Miso has chosen to produce quality barley miso in small quantities, buying barley directly from Japanese farmers at the right price.
