Recipe for Grilled Salmon with Red Miso

Ingredients
- 2 fresh salmon fillets (sashimi type, approx. 150-180 g each)
- 2 tablespoons Marukome red miso
- 1 tablespoon cooking sake
- 1 tablespoon sugar
- 1 teaspoon neutral oil (for cooking)
- 50 g mesclun to serve
- A few sesame seeds (optional, for garnish)
Directions
- In a small bowl, mix the red miso, sake and sugar until smooth.
- Brush the salmon fillets generously with the marinade, then leave to rest in the fridge for 30 minutes.
- Heat a non-stick frying pan with a little oil over medium heat.
- Place fillets skin side down (if present) and grill for 4-5 minutes on each side, until salmon is golden brown and cooked to your liking.
- Arrange the mesclun on the plates.
- Place the grilled salmon fillets on top.
- Garnish with sesame seeds and a drizzle of reduced marinade for even more flavour.
