Discover our simple and tasty recipe for grilled salmon with red miso. Filleted salmon marinated in Marukome miso, King Jozo cooking sake and sugar develops rich, umami flavors. Serve on a bed of fresh mesclun for a light starter or refined main course. Easy to prepare, quick to cook and perfect for surprising your guests with authentic Japanese flavors.
Ingredients
2 fresh salmon fillets (sashimi type, approx. 150-180 g each)

2 tablespoons Marukome red miso

1 tablespoon cooking sake

1 tablespoon sugar
- 1 teaspoon neutral oil (for cooking)
50 g mesclun to serve
- A few sesame seeds (optional, for garnish)
Instructions
- In a small bowl, mix the red miso, sake and sugar until smooth.
Brush the salmon fillets generously with the marinade, then leave to rest in the fridge for 30 minutes.
- Heat a non-stick frying pan with a little oil over medium heat.
Place fillets skin side down (if present) and grill for 4-5 minutes on each side, until salmon is golden brown and cooked to your liking.
- Arrange the mesclun on the plates.
- Place the grilled salmon fillets on top.
- Garnish with sesame seeds and a drizzle of reduced marinade for even more flavour.
Recipe notes
Express variation: To save time, you can prepare the marinade the day before and leave the salmon to marinate overnight for an even stronger flavor.
Baking option: Preheat the oven to 180°C and place the fillets in the oven for 10-12 min on a tray lined with baking paper.
Serving suggestions: Serve with Japanese rice or quinoa for a complete meal.
Flavor balance: Adjust the sugar to your taste for a sweeter or milder salmon.
