A miso made by incorporating vegetable dashi, which gives it a mild, fragrant taste. Miso is a fermented soybean paste, rich in protein and characterized by an umami taste. It is made by fermenting soy, rice, vegetables and dashi in wooden barrels for several months. The kôji rice ferments present in miso make it a living product that continues to refine over time. As miso contains dashi, it can be diluted directly in water to make miso soup. You can also add 1 CC to your soups to add taste and umami.
