Discover our recipe for Yasai Soba, a delicious Japanese specialty featuring soba noodles and a variety of colorful vegetables. Perfect for a comforting winter evening, this recipe is also suitable for vegetarian diets!
Ingredients

400 g soba noodles
- 1 lotus root
-
2 carrots
-
4 fresh button mushrooms
-
2 shiitake mushrooms
-
4 small ears of corn
-
2 spring onions
-
Tsuyu soba sauce
Instructions
- Prepare the vegetables:
Peel and thinly slice the lotus root.
Peel and julienne the carrot.
Clean and slice the button mushrooms and shiitake mushroom.
Cut corn on the cob into small pieces.
Slice the spring onion into thin rings, separating the white from the green parts.
- Cook soba noodles according to package instructions. Once cooked, drain and rinse with cold water to stop cooking. Set aside.
- In a saucepan, bring sufficient water to the boil to cook the vegetables. Add the lotus root slices, carrot julienne, button mushrooms, shiitake mushroom and corn pieces.
- Cook for about 5 minutes or until vegetables are tender-crisp.
- Drain the vegetables and set aside. To serve, divide the cooked soba noodles between two bowls.
- Arrange the cooked vegetables over the noodles. Pour the tsuyu sauce generously over the vegetables and noodles.
- Garnish each bowl with the spring onion rings.
- Serve immediately and enjoy these hot and delicious Yasai Soba!
Recipe notes
Soba noodles are made from buckwheat flour, making them ideal for a gluten-free diet.

TSUYU SOBA SAUCE
