Ingredients

  • 400 g soba noodles
  • 1 lotus root
  • 2 carrots
  • 4 fresh button mushrooms
  • 2 shiitake mushrooms
  • 4 small ears of corn
  • 2 spring onions
  • Tsuyu soba sauce

Directions

  1. Prepare the vegetables: Peel and slice the lotus root into thin slices. Peel and julienne the carrot. Clean and thinly slice the button mushrooms and shiitake mushrooms. Cut the corn cobs into small pieces. Cut the spring onion into thin rings, separating the white part from the green part.
  2. Cook soba noodles according to package instructions. Once cooked, drain and rinse with cold water to stop cooking. Set aside.
  3. In a saucepan, bring sufficient water to the boil to cook the vegetables. Add the lotus root slices, carrot julienne, button mushrooms, shiitake mushroom and corn pieces.
  4. Cook for about 5 minutes or until vegetables are tender-crisp.
  5. Drain the vegetables and set aside. To serve, divide the cooked soba noodles between two bowls.
  6. Arrange the cooked vegetables over the noodles. Pour the tsuyu sauce generously over the vegetables and noodles.
  7. Garnish each bowl with the spring onion rings.
  8. Serve immediately and enjoy these hot and delicious Yasai Soba!
