Our tips

The "sobayu" cooking water is highly nutritious (fiber, potassium, antioxidant, vitamin B, etc.), so you can drink it or pour it over leftover noodles at the end of the meal with a little shichimi spice.
Rinsing them under cold water stops the cooking process and makes your pasta melt. It also gets rid of the starch, leaving your pasta smooth and non-sticky.

For 1 person: place 100g soba in 1L boiling water. Cook for 5min30, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adapt the cooking time and firmness of the noodles to your taste. Beware of overflowing during cooking.

I cook them with the product "FLEURS DE SAKURA MARINÉES À INFUSER - 35G" as well as a simple dashi and the result is delicious and visually very beautiful.
