Ingredients

  • Soba: 400 g
  • Beef: 320 g
  • Shiitake: 4 to 5
  • Leeks: 2
  • Burdock root (gobō): 1/2
  • Sukiyaki sauce: 500 ml
  • Water: 500 ml
  • Chives (or green onions): to taste
  • Red pepper filaments: to taste

Directions

  1. Cut the shiitake mushrooms, leeks, burdock and beef into bite-size pieces.
  2. In a large saucepan, pour the sukiyaki sauce and water, then adjust the taste to suit your preference.
  3. Add the shiitake mushrooms, burdock and beef, then bring to the boil, stir in the leeks and simmer until tender.
  4. Serve the sukiyaki sauce in individual bowls, adding chives and red pepper flakes to taste. Dip the soba in this rich, flavorful sauce before serving.
