This variety is specially grown and produced in the Oki Izumo region, known for its unique climatic conditions and mineral-rich soils. The taste of these soba noodles is characterized by a pronounced nutty flavor and a soft, smooth texture. The ingredients used are buckwheat and natural spring water from the region, with no additives or preservatives added. The buckwheat is stone-ground for a fine texture and intense flavor. They can be served hot with a light soba broth or cold with a traditional soba sauce made with dashi, soy sauce and mirin. They can also be garnished with seaweed, green onions, wasabi or tempura.

Our tips

The "sobayu" cooking water is highly nutritious (fiber, potassium, antioxidant, vitamin B, etc.), so you can drink it or pour it over leftover noodles at the end of the meal with a little shichimi spice.
Rinsing them under cold water stops the cooking process and makes your pasta melt. It also gets rid of the starch, leaving your pasta smooth and non-sticky.

For 1 person: immerse 1 portion (100g) of soba in 1L of boiling water. Cook for 3min, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adapt the cooking time and firmness of the noodles to your taste. Beware of overflowing during cooking.
