This variety is specially grown and made in the Oki Izumo region, known for its unique climatic conditions and mineral-rich soils. The taste of these soba noodles is characterized by a pronounced nutty flavor and a soft, smooth texture. The ingredients used are buckwheat and natural spring water from the region, with no additives or preservatives added. The buckwheat is stone-ground for a fine texture and intense flavor. They can be served hot with a light soba broth or cold with a traditional soba sauce made with dashi, soy sauce and mirin. They can also be garnished with seaweed, green onions, wasabi or tempura.

The company relies on traditional manufacturing methods, such as the "hiki-gurumi" method for grinding buckwheat grains, to guarantee high-quality soba. For 1 person: immerse 1 portion (100g) of soba in 1L of boiling water. Cook for 3min, stirring gently. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adapt the cooking time and firmness of the noodles to your taste.
