This variety is specially grown and produced in the Oki Izumo region, known for its unique climate and mineral-rich soil. The taste of these soba noodles is characterized by a pronounced nutty flavor and a soft, smooth texture. The ingredients used are buckwheat and natural spring water from the region, with no additives or preservatives. The buckwheat is stone-ground for a fine texture and intense flavor. They can be served hot with a light soba broth or cold with a traditional soba sauce made from dashi, soy sauce, and mirin. They can also be garnished with toppings such as seaweed, green onions, wasabi, or tempura.

Founded in 1924 in Izumo, Shimane Prefecture, Honda Shoten is renowned for its expertise in producing soba. The company relies on traditional manufacturing methods, such as the “hiki-gurumi” method for milling buckwheat grains, thereby ensuring high-quality soba. Honda Shoten values quality, authenticity, and the simplicity of its ingredients, while fostering a spirit of innovation to offer products that respect Japanese culinary traditions.

For 1 person: add 1 portion (100 g) of soba to 1 L of boiling water. Cook for 3 minutes, stirring gently. Drain and rinse with cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth with your choice of toppings (tempura, chives, daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adjust the cooking time and firmness of the noodles to your taste.
Beware of the risk of overflowing during cooking.
