These thick wheat flour noodles have a smooth, silky texture. Traditionally served in dashi broth with tempura, they can also be enjoyed stir-fried. In the summer, udon noodles are also eaten cold, paired with nori seaweed or daikon radish, then dipped in mentsuyu sauce, made with soy sauce, dashi, and cooking sake.

Ingrédients : - 500g de blancs de poulet / haut de cuisse de poulet désossée - 60 ml de sauce soja iRASSHAi - 2 cas de mirin iRASSHAi - 2 cas de saké de cuisine - 2 cas de sucre - 1 gousse d’ail, hachée finement - 1 cuillère à café de gingembre, frais, rapé - 1 cuillère à soupe d’huile végétale (pour la cuisson) - Graines de sésame grillées (pour la garniture) - Ciboule ou oignons verts émincés (pour la garniture) Étapes : 1. Dans un bol moyen, mélangez la sauce soja, le mirin, le sake, le sucre, l’ail haché et le gingembre râpé. Remuez bien pour que le sucre soit complètement dissous. 2. Placez le poulet dans une boîte de conservation peu profonde. Versez la moitié de la marinade sur le poulet, en réservant le reste pour plus tard. Assurez-vous que tous les morceaux de poulet sont bien enrobés de marinade. Fermez et laissez mariner au réfrigérateur pendant au moins 30 minutes, idéalement 1 à 2 heures. Plus vous marinez, plus le poulet sera savoureux. 3. Dans une grande poêle à feu moyen, chauffez l’huile végétale. Retirez les morceaux de poulet de la marinade et égouttez-les légèrement (gardez la marinade restante). Ajoutez les morceaux de poulet dans la poêle chaude et faites-les cuire de 4 à 5 minutes de chaque côté, ou jusqu’à ce qu’ils soient bien dorés et cuits à travers. 4. Pendant que le poulet cuit, versez la marinade réservée dans une petite casserole. Portez à ébullition, puis réduisez le feu et laissez mijoter pendant environ 5 minutes, ou jusqu’à ce que la sauce épaississe légèrement. La sauce va réduire et devenir plus épaisse et sirupeuse. 5. Une fois que le poulet est cuit, versez la sauce teriyaki épaisse sur le poulet dans la poêle. Remuez pour enrober les morceaux de poulet de la sauce glaçante. 6. Transférez le poulet teriyaki dans un plat de service. Saupoudrez de graines de sésame grillées et de ciboule émincée pour une touche de fraîcheur et de saveur. 7. Servez le poulet teriyaki avec du riz blanc cuit à la vapeur ou des nouilles soba, et des légumes sautés pour un repas complet et équilibré. Bon appétit !
