These thick wheat-flour noodles have a smooth, silky texture. Traditionally served in dashi broth with tempura, they can also be sautéed. In summer, udon noodles can also be eaten cold, with nori or daikon seaweed, dipped in a mentsuyu sauce made from soy sauce, dashi and cooking sake.

1. Place udon in 1L boiling water.
2. Cook for 9 min with stirring.
3. Drain and rinse for smooth, non-sticky noodles.

Adjust cooking time and noodle firmness to your taste."
