Recipe Mentaiko Udon

Mentaiko Udon is a simple, tasty Japanese dish featuring the rich, slightly spicy taste of mentaiko (marinated hake roe). Combined with soft udon noodles, this dish offers a perfect balance of creaminess, umami and freshness.

Ingredients

  • 200 g fresh udon noodles
  • 2 bags mentaiko (spicy hake roe)
  • 2 tablespoons unsalted butter
  • 2 tbsp. soy sauce
  • 2 tbsp. fresh cream or milk
  • 1 teaspoon mirin (optional)
  • 1/2 sheet nori (dried seaweed), cut into thin strips
  • 1 tablespoon spring onion or green onion, finely chopped
  • Sesame seeds (for decoration)

Directions

  1. Cook noodles according to package instructions, usually in a large pot of boiling water for 2-3 minutes. Drain and rinse quickly under cold water to stop cooking, then set aside.
  2. Add the mentaiko eggs to a bowl. Add butter, soy sauce, crème fraîche (or milk), and mirin (if using). Mix well until smooth.
  3. In a frying pan over low heat, pour in the sauce and heat gently without boiling. Add the udon noodles and toss gently to coat well.
  4. Divide noodles among bowls. Garnish with nori strips, spring onions and sesame seeds.
  5. Serve immediately, and toss the noodles lightly before eating to ensure that the flavours are evenly distributed.
