Recipe Mentaiko Udon
Mentaiko Udon is a simple, tasty Japanese dish featuring the rich, slightly spicy taste of mentaiko (marinated hake roe). Combined with soft udon noodles, this dish offers a perfect balance of creaminess, umami and freshness.

Ingredients
- 200 g fresh udon noodles
- 2 bags mentaiko (spicy hake roe)
- 2 tablespoons unsalted butter
- 2 tbsp. soy sauce
- 2 tbsp. fresh cream or milk
- 1 teaspoon mirin (optional)
- 1/2 sheet nori (dried seaweed), cut into thin strips
- 1 tablespoon spring onion or green onion, finely chopped
- Sesame seeds (for decoration)
Directions
- Cook noodles according to package instructions, usually in a large pot of boiling water for 2-3 minutes. Drain and rinse quickly under cold water to stop cooking, then set aside.
- Add the mentaiko eggs to a bowl. Add butter, soy sauce, crème fraîche (or milk), and mirin (if using). Mix well until smooth.
- In a frying pan over low heat, pour in the sauce and heat gently without boiling. Add the udon noodles and toss gently to coat well.
- Divide noodles among bowls. Garnish with nori strips, spring onions and sesame seeds.
- Serve immediately, and toss the noodles lightly before eating to ensure that the flavours are evenly distributed.
