Kato Heitaro Shoten est une entreprise japonaise spécialisée dans la production artisanale de miso, fondée en 1850. Située dans la ville d'Odawara, préfecture de Kanagawa, elle est la seule brasserie de miso dans le district de Seisho. L'entreprise perpétue des méthodes de fabrication traditionnelles, notamment la fermentation dans des fûts en bois de cèdre vieux de 90 ans, conférant à ses produits une saveur et une texture uniques. Kato Heitaro Shoten sélectionne rigoureusement des ingrédients locaux de haute qualité et utilise l'eau souterraine des montagnes de Hakone pour produire ses misos. L'entreprise privilégie le travail manuel et une fermentation longue, garantissant des misos riches en nutriments et en probiotiques, bénéfiques pour la santé.
