This miso version offers a pleasant and surprising mix of sweet and savory flavors.
A recipe with original flavours and great umami taste that's a must-try!

Ingredients
- 125 g softened butter
- 100 g brown sugar

70 g white sugar
- 1 sachet vanilla sugar
- 1 tsp. liquid vanilla
- 1 egg
- 225 g flour
- 1 level teaspoon baking powder
- 100 g dark chocolate (approx. 20 g for decoration)
- 3 tsp. white miso
Instructions
Take the butter out of the fridge at least 30 minutes before you start, so that it is soft. Cut the dark chocolate into large nuggets for an even more delicious effect.
In a large bowl, mix the butter with the brown sugar, white sugar and vanilla sugar using a spatula or mixer until creamy. Add the liquid vanilla, egg and white miso, and mix until fully incorporated.
Sift the flour with the baking powder and gradually add to the previous mixture. Mix until smooth, then add the dark chocolate chips, reserving a few pieces for decoration.
Divide the dough into 7 balls weighing approximately 100 g each. Flatten them slightly, then place them in the freezer for 30 minutes. This will produce thick, chewy cookies.
Preheat oven to 190°C. Place the cookies on a baking tray lined with baking paper, spacing them evenly. Press the remaining chocolate pieces lightly onto the top.
Bake for 15 minutes at 190°C until the cookies are lightly browned on the edges but still soft in the center.
Leave them on the baking sheet for a few minutes, then transfer them to a presentation dish.

WHAT IS MISO?
Miso is a key ingredient in Japanese cuisine, used in most Japanese dishes.
Miso is a fermented paste made from soy, salt, rice or barley and ferments.
THE DIFFERENT TYPES OF MISO
There are three different types of miso: white, red and black. The color of miso varies according to its fermented soy content.
FREEZING TIPS
Freezing cookies or cookie dough is a great way to enjoy homemade cookies at any time, without having to prepare everything at once. Here are a few tips to ensure that your cookies and cookie dough retain their freshness after freezing.
Form balls of dough: If you want to freeze the cookie dough, form balls of the desired size for your cookies, as if you were going to bake them. This allows you to bake cookies on demand, straight from the freezer to the oven.
Pre-freezing the dough balls: Place the dough balls on a baking sheet lined with parchment paper, making sure they don't touch, then place them in the freezer for 1-2 hours. This will prevent them from sticking together.
Storage: Once the dough balls are frozen, transfer them to an airtight freezer bag or container. As with baked cookies, remove as much air as possible to preserve the quality of the dough.
Labeling and storage: Label with date and type of cookie dough. Cookie dough can be stored in the freezer for 2-3 months.
Baking frozen dough: You can bake the dough balls directly from the freezer. Simply add 2-3 minutes to the original baking time, and bake the cookies as indicated in the recipe.
