This variety of kombu is cultivated by Tanaka Bussan in the clear, cold waters of the Sea of Hokkaido, in northern Japan. It is then cut into thin strips and sun-dried before being lightly salted to produce shio kombu. This product comes in the form of dried, salted strips, perfect for adding flavor to your dishes. It can be used in many preparations, such as soups, salads, stews, and marinades. It provides an intense umami flavor and a slightly crunchy texture.
