💙 A miso with character, well aged, with a real richness in the mouth. It's used for soups, but also as a marinade.

Its long fermentation gives it rich, powerful aromas, as well as a beautiful brown color. It is made by hand in the town of Odawara, Kanagawa prefecture, using local ingredients and groundwater from the Hakone mountains. The miso is then aged in 90-year-old wooden barrels. This manufacturing method has remained unchanged since ancient times. Rich in nutrients and probiotics, with a mild, slightly salty taste and a creamy texture that blends easily into preparations, this miso is perfect for adding depth to your dishes in sauces, curries or purées.
