Hakone Long Fermentation Miso - 200g

Its long fermentation gives it rich, powerful aromas and a beautiful brown color. It is made by hand in the town of Odawara, Kanagawa prefecture, using local ingredients and groundwater from the Hakone mountains. The miso is then aged in 90-year-old wooden barrels. This method of production has remained unchanged since ancient times.

The emphasis in production is on quality above all else. While the majority of today's miso production uses more advanced production techniques to gain in profitability, Kato Haitaro Shoten is one of the last miso factories to have chosen to maintain a method of production faithful to the basic principles of miso production, which is the company motto: "The important thing is to be faithful to your principles". Handcrafting and the bacteria present in the cedar barrels give miso its unique texture and taste. Rich in nutrients and probiotics, with a mild, slightly salty taste and a creamy texture that blends easily into preparations, this miso is perfect for adding depth to your dishes in sauces, curries or purées.
