Mild and delicate on the palate, this miso goes wonderfully well with a wide range of foods. It is handcrafted in the town of Odawara, Kanagawa prefecture, using local ingredients and groundwater from the Hakone mountains. It is then aged in 90-year-old wooden casks. This method of production has remained unchanged since ancient times. Production is focused on quality. While the majority of today's miso production uses more advanced production techniques to gain in profitability, Kato Haitaro Shoten is one of the last miso factories to have chosen to maintain a manufacturing method faithful to the basic principles of miso production. Indeed, this is the company motto: "The important thing is to be true to your principles". Hand-crafting and the bacteria present in the cedar barrels give miso a unique texture and taste found nowhere else. Anti-gaspi recipe: collect, clean and finally chop the zest of a mandarin orange. Heat the miso in a saucepan over low heat, stirring, with 3 tablespoons of cooking spirit, 1 to 3 tablespoons of sugar and 3 tablespoons of water (or mirin, if you have it). When the mixture has thickened, add the zest and leave to heat for a few minutes, stirring constantly. Now you have an original condiment to accompany white fish, chicken and vegetables.
