Tororo soba is a specialty of the Shinshu region, consisting of soba noodles and Japanese yam paste, accompanied by a dashi-based sauce, soy sauce and mirin. This combination of flavors and textures creates a unique and delicious dish. They have an intense buckwheat taste and a firm, slightly elastic texture. They can be served hot or cold with tsuyu sauce or soy sauce. Tororo topping can be added for flavor and texture. Produced in Japan by Shinshu Togakushi Soba, a family-run noodle company since the post-war period, they are made in the Nagano region, renowned for the quality of its buckwheat.
For 1 person: place 110g soba in 1L boiling water. Cook for 4min, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adapt the cooking time and firmness of the noodles to your taste.
Beware of overflowing during cooking.
