Tororo soba is a specialty of the Shinshu region, consisting of Japanese soba noodles and yam paste, served with a sauce made from dashi, soy sauce and mirin. This combination of flavors and textures creates a unique and delicious dish. They have an intense buckwheat taste and a firm, slightly elastic texture. They can be served hot or cold with tsuyu sauce or soy sauce. Tororo topping can be added for flavor and texture. Shinshu Togakushi Soba noodles are prepared using a traditional method that preserves their unique texture and flavor.

Our tips

The "sobayu" cooking water is highly nutritious (fiber, potassium, antioxidant, vitamin B, etc.), so you can drink it or pour it over leftover noodles at the end of the meal with a little shichimi spice.
Rinsing them under cold water stops the cooking process and makes your pasta melt. It also gets rid of the starch, leaving your pasta smooth and non-sticky.

For 1 person: place 110g soba in 1L boiling water. Cook for 4min, stirring gently. Drain and rinse in cold water. Enjoy cold, "zaru"-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adapt the cooking time and firmness of the noodles to your taste. Beware of overflowing during cooking.
