These soba noodles are made exclusively with buckwheat flour, also known as sobako in Japanese. The buckwheat flour used to make these soba noodles is grown locally in the Togakushi mountains, where it is carefully selected for its superior quality. Shinshu Togakushi soba noodles have a firm, slightly crunchy texture, with a rich, delicious buckwheat flavor. This variety of soba noodle is particularly appreciated by soba connoisseurs for its superior texture and taste, achieved through a traditional production technique.

Our tips

The "sobayu" cooking water is highly nutritious (fiber, potassium, antioxidant, vitamin B, etc.), so you can drink it or pour it over leftover noodles at the end of the meal with a little shichimi spice.
Rinsing them under cold water stops the cooking process and makes your pasta melt. It also gets rid of the starch, leaving your pasta smooth and non-sticky.

For 1 person: place 90g soba in 1L boiling water. Cook for 4 minutes, stirring gently. Turn off the heat, cover and leave to stand for 2 minutes. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.). Adapt the cooking time and firmness of the noodles to your taste. Beware of overflowing during cooking.
