Produced in Japan by Shinshu Togakushi Soba, a family-run noodle company since the post-war period, they are made in the Nagano region, renowned for the quality of its buckwheat.
For 1 person: place 90g soba in 1L boiling water. Cook for 4 min, stirring gently. Turn off the heat, cover and leave to stand for 2 minutes. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adapt the cooking time and firmness of the noodles to your taste.
Beware of overflowing during cooking.
