Flat, wide noodles with no added salt, hence the name "muen" which means "no salt".

For 1 person: place 100g kishimen in 1L boiling water. Cook for 9 to 10 minutes, stirring gently. Drain and rinse in cold water. Enjoy cold, zaru-style, with tsuyu sauce, or hot in a broth, with the accompaniments of your choice (tempura, chives, white daikon radish, grilled poultry, wasabi, sliced nori seaweed, etc.).
Adjust the cooking time and firmness of the noodles to your taste.
It's a nice pastry to have, and allows you to have a slightly different shape. I put them in a broth with dashi and miso soup, and it does the job nicely.
