These mushrooms are grown in the Kyushu region of Japan. They are carefully selected, harvested by hand, then dried to preserve their flavor. Their taste is pronounced umami, with a woody, slightly smoky flavor, nutty notes and a slightly rubbery texture. To rehydrate, place mushrooms in lukewarm water for about 20 minutes, then drain and use in your dishes. Ideal for soups, stir-fries, stews or as an ingredient in sauces.

Founded in 1970 in Takachiho-machi, Miyazaki Prefecture, Suigomoto shoten specializes in dried products such as shiitakes, bamboo shoots and dried ferns. The company is guided by the desire to develop ingredients that are safe and easy to use, while guaranteeing the health of consumers. Their cultivation method uses natural, pesticide-free woods, enabling them to offer certified organic and kosher products.
1. Run the dried mushrooms under cold water to remove any impurities.
2. Place in a bowl and cover generously with lukewarm or cold water (avoid boiling water, which hardens the texture).
3. Soak for 20-30 minutes for quick use, or 2-3 hours (or even overnight in the fridge) for optimal rehydration.
4. Drain mushrooms and squeeze out excess water.
5. Keep the soaking liquid: the resulting broth is rich in aromas. Strain through a fine sieve or gauze, then use as a base for soups, sauces or broths.
6. Cut and cook mushrooms as you would fresh ones (wok, soup, stew...).
Note: the stems of shiitake mushrooms, which are often more fibrous, can be set aside to flavour a broth.
