Collection: Miso red & black

Red miso is the variety most commonly used in Japan. It is twice as salty as white miso. You can use it for broths and marinades for fish, meat and vegetables. The longer miso is fermented, the darker its color and the more intense its taste: this is the case with black miso. Composed entirely of soy, its texture is thick and its taste pronounced.
