This miso is matured for several months in 90-year-old wooden barrels, giving it its brown color and characteristic taste, typical of red miso. It is made by hand in the town of Odawara, Kanagawa prefecture, using local ingredients and groundwater from the Hakone mountains. This manufacturing method has remained unchanged since ancient times. Rich in nutrients and probiotics, with a mild, slightly salty taste and a creamy texture that blends easily into preparations, this miso is perfect for adding depth to your dishes, sauces, curries or purées.

Our tips

Mix a can of tuna with 1 tbsp of this miso, 1 tbsp of cooking spirit (or mirin), 2 tbsp of sugar and 1 tbsp of oil, to obtain a very good sauce to accompany your summer vegetables (eggplant, zucchini, etc.). --- For an original pesto, mix 1 CC miso with spinach, coriander, a clove of garlic, sesame oil and lemon juice.
