Its balanced ratio of rice koji and soybean koji (50-50) makes it an ideal ingredient for miso soups and broths, as well as marinades: it will give meats a tender and juicy texture, along with a well-rounded, rich flavor that’s perfectly seasoned. It can also be used in salad dressings, sauces, or condiments—for example, mixed with mayonnaise to create a dip for your vegetables. This is a miso with a flavor typical of Nagano Prefecture.
