This miso is made from soybeans and Akita-komachi rice. Both ingredients are grown in the Akita region of northern Japan and benefit from the groundwater sources of Hachimantai in Iwate Prefecture. This miso undergoes slow fermentation over several months, and its high proportion of rice koji (12% koji to 10% soybeans) gives it a mild, deep flavor with a hint of acidity. It is perfect for soups, marinades, and sauces, or in dips for appetizers. Its brewery, Asari Sasuke Shoten, founded in 1872, focuses on products originating from Akita.
