This miso is made from soybeans and Akita-komachi rice. These two ingredients share the fact that they are grown in the Akita region of northern Japan and benefit from the groundwater springs of the Hachimantai, in Iwate prefecture. The slow fermentation of this miso takes place over several months, and its high proportion of rice kôji (12% kôji vs. 10% soya bean) gives it a mild, deep taste, with a hint of acidity. It's perfect for soups, marinades and sauces, or in dips for aperitifs. Its brewery, Asari Sasuke Shoten, founded in 1872, focuses on products from Akita.
